What Makes Sourdough Different?

Sourdough is one of the oldest methods of bread-making in the world. Before commercial yeast existed, all leavened bread was sourdough in some form — raised by wild microorganisms living naturally in flour and water. Today, the word sourdough describes a specific approach to fermentation that produces bread with a character and depth that is difficult to replicate by other means.

What Sourdough Actually Is

At its most fundamental, sourdough is bread that is leavened and flavoured by a living culture of wild yeasts and lactic acid bacteria — what bakers call a starter. The starter is maintained over time by feeding it flour and water on a regular schedule. As it ferments, it produces carbon dioxide (which makes dough rise), organic acids (which develop flavour and extend shelf life), and a complex mix of compounds that contribute to aroma and crust.

There are no shortcuts built into this process. The starter must be active and healthy before it can raise a dough. The dough must ferment long enough for flavour to develop properly. This is what distinguishes sourdough from bread made with instant commercial yeast, where the primary goal is a reliable, fast rise rather than the slow development of flavour.

The Role of a Living Starter

A sourdough starter is not an ingredient you add once and discard. It is a living culture that the baker maintains continuously — feeding it, watching how it rises, learning its rhythm across different temperatures and seasons. Every starter develops its own microbial fingerprint over time, shaped by the flour it is fed, the water used, and the environment in which it lives.

This living quality is one reason sourdough varies between bakers and between bakeries. Two people using the same recipe in different cities may produce noticeably different bread — different flavour notes, different crumb structure, different crust behaviour. The starter carries much of that character.

Natural Fermentation and How It Develops Flavour

The fermentation that happens in a sourdough dough is considerably more complex than what occurs with commercial yeast. Wild yeasts and bacteria work alongside each other over a long period, producing not just gas to leaven the dough but a range of organic acids, esters and other compounds that contribute to the finished loaf.

Lactic acid contributes a mild, yoghurt-like note. Acetic acid (the same compound found in vinegar, though in much smaller quantities) adds depth and a slight sharpness. The balance between these two acids — and the many other products of fermentation — is influenced by hydration, temperature, flour type and fermentation time. This is why the flavour of a sourdough loaf is described as complex rather than simply sour.

Fermentation also changes how the dough develops over time. When fermentation, hydration, flour strength and handling are properly balanced, the dough can become extensible enough to support an open crumb. Fermentation is important, but crumb structure also depends on shaping, proofing and baking.

How Sourdough Differs from Conventionally Yeasted Bread

Bread made with commercial yeast is designed for consistency and speed. The yeast is standardised to produce a predictable rise within a short time window. This makes production efficient and replicable, but it leaves little time for the flavour development that longer fermentation produces.

Sourdough, by contrast, trades speed for depth. The process is slower, less predictable across different environments, and more dependent on the skill and attention of the baker. The resulting bread tends to have a more pronounced flavour, a crust that behaves differently when baked, and a crumb with a more irregular, open texture.

Neither approach is categorically better — they serve different purposes. But for those who value bread with genuine character and craftsmanship, sourdough offers something distinct.

Why Crust and Crumb Vary Naturally

One of the things that surprises people new to handcrafted sourdough is that no two loaves are identical. The crust may be slightly thicker on one bake than another. The crumb may be more open or slightly more compact depending on how the dough behaved on that particular day.

This variation is a natural consequence of working with a living ferment rather than a standardised industrial process. Temperature, humidity, the behaviour of the starter on a given day, and subtle differences in the flour all influence the final result. A consistent baker manages these variables with skill and experience — but they cannot be eliminated entirely, and we believe they should not be.

Variation in a handcrafted loaf is not a defect. It is evidence that the bread was made by hand, with attention, from a living culture — not produced by a system designed to flatten every difference.

Judging Sourdough by the Right Measures

Good sourdough is best considered as a whole: flavour, aroma, crust, crumb and freshness all matter. The ideal balance varies by style—some excellent loaves have an open crumb, while others are intentionally closer and more even. What matters is that the texture suits the loaf, the crust is well developed and the flavour is balanced and distinctive.

A Note from Our Own Search

Our search for remarkable sourdough included tasting bread across India, the UAE, Saudi Arabia, Oman, Europe and the United States. Those experiences informed the qualities we wanted to pursue in our own bread in Pune — the flavour profiles we found most honest, the crust characteristics we most admired, and the approaches to fermentation that produced the most genuinely interesting results.

We brought those reference points back with us. We did not bring a formula. The bread we bake reflects what we learned, filtered through our own starter, our own flour sources, and the particular conditions of baking in Pune.
